A D3 Sauce Pan and a Porcelain Double Boiler for Chocolate, Custards and Hollandaise
This set combines the All-Clad 4202 D3 tri-ply 2-quart sauce pan with a 1.5-quart porcelain double boiler insert and a stainless lid. Set the insert over simmering water for gentle, indirect heat: chocolate melts without seizing and egg sauces thicken without scrambling. On its own, the sauce pan is a fully bonded tri-ply pan for everyday grains and sauces.

Why a Double Boiler
Chocolate, custard and hollandaise break when direct heat hits them. Steam from the pan below heats the porcelain gently and evenly.
- Melts chocolate without seizing. Indirect heat keeps the temperature low and even.
- Hollandaise and béarnaise. The traditional way to keep egg yolks from scrambling while you whisk.
- Custards and pastry cream. Even steam heat avoids the hot spots that cause curdling.
- Two tools in one. Use the D3 sauce pan alone for rice, sauces and soups.
- Three bonded layers, rim to rim. An aluminum core sits between two layers of stainless steel and is bonded all the way up the sides, so heat spreads evenly across the base and walls.
- An 18/10 stainless cooking surface. The polished starburst interior resists sticking, cleans up easily and does not react with acidic foods.
- Works on every cooktop, including induction. The magnetic stainless exterior works on gas, electric, ceramic and induction.

Use and Care
The short version. The All-Clad use and care guide has the full details.
- Preheat, then add fat. Heat the empty pan over medium for a minute or two, then add oil or butter. Stainless releases food far better once it is hot.
- Stay at medium. Bonded cookware spreads heat well, so medium does the work high heat does on a thinner pan. Save high heat for boiling water.
- Let food release. Proteins stick at first and let go once a crust forms. Wait for that before you turn them.
- Cool, then clean. Let the pan cool before it meets water. Wash with warm soapy water, and use a fine powdered cleanser and a nylon pad for stuck food or rainbow tint. Skip steel wool and bleach.
