Use and Care

1. Preheat, then add fat. Heat the empty pan over medium for a minute or two, then add oil or butter. Stainless releases food far better once it is hot.
2. Stay at medium. Bonded cookware spreads heat well, so medium does the work high heat does on a thinner pan. Save high heat for boiling water.
3. Let food release. Proteins stick at first and let go once a crust forms. Wait for that before you turn them.
4. Cool, then clean. Let the pan cool before it meets water. Wash with warm soapy water, and use a fine powdered cleanser and a nylon pad for stuck food or rainbow tint. Skip steel wool and bleach.
