Why Copper Core Fry Pans
Fry pans see the highest heat and the fastest changes in the kitchen. Copper Core is All-Clad's most responsive build, and the lid on the 12-inch lets it steam and braise too.
- Fry pans in the sizes you use. Flat bases and flared sides for searing, browning, eggs and quick sautés, with easy turning by spatula.
- A covered 12-inch pan. The lid turns the big pan into a braiser for chicken thighs or a steamer for greens. It has a helper handle for lifting.
- A copper core does the work. All-Clad bonds a thick copper core between layers of aluminum and stainless steel. Copper responds quickly when you turn the burner up or down, which makes searing and pan sauces easier to control.
- Five bonded layers, all the way to the rim. The layers run from the base up the walls, so heat spreads across the bottom and up the sides instead of pooling in the center.
- An 18/10 stainless cooking surface. The polished interior with All-Clad's starburst finish resists sticking and does not react with acidic foods like tomato or wine.
- Works on every cooktop, including induction. The magnetic stainless exterior works on gas, electric, ceramic and induction.
- Oven and broiler safe to 600°F. Sear on the stovetop and finish in the oven without changing pans.
- Handles built for control. Riveted stainless handles have a heat-choke cutout that slows heat traveling to the grip.

Use and Care
The short version. The All-Clad use and care guide has the full details.
- Preheat, then add fat. Heat the empty pan over medium for a minute or two, then add oil or butter. Stainless releases food far better once it is hot.
- Stay at medium. Bonded cookware spreads heat well, so medium does the work high heat does on a thinner pan. Save high heat for boiling water.
- Let food release. Proteins stick at first and let go once a crust forms. Wait for that before you turn them.
- Cool, then clean. Let the pan cool before it meets water. Wash with warm soapy water, and use a fine powdered cleanser and a nylon pad for stuck food or rainbow tint. Skip steel wool and bleach.
