Why Cooks Reach for the 3-Qt Sauté Pan First
A fry pan spills when you add liquid and a saucepan is too narrow to sear. The 3-quart sauté pan does both, and Copper Core adds the heat control that delicate sauces need.
- Sear, deglaze and braise in one pan. Brown chicken thighs or fish fillets, deglaze with wine or stock, add liquid, cover and finish. Nothing changes pans.
- Straight sides hold in juices. Tall walls limit splatter and keep liquid in the pan, while the wide base leaves room to turn food with a spatula.
- A copper core does the work. All-Clad bonds a thick copper core between layers of aluminum and stainless steel. Copper responds quickly when you turn the burner up or down, which makes searing and pan sauces easier to control.

Condition: new and never used. It ships in the All-Clad retail carton, which may be torn, with the warranty card. Some units may show light superficial scratch marks on up to 5% of the exterior. Capital Cookware is an authorized All-Clad dealer and buys its inventory directly from All-Clad.
Use and Care

- Preheat, then add fat. Heat the empty pan over medium for a minute or two, then add oil or butter. Stainless releases food far better once it is hot.
- Stay at medium. Bonded cookware spreads heat well, so medium does the work high heat does on a thinner pan. Save high heat for boiling water.
- Let food release. Proteins stick at first and let go once a crust forms. Wait for that before you turn them.
- Cool, then clean. Let the pan cool before it meets water. Wash with warm soapy water, and use a fine powdered cleanser and a nylon pad for stuck food or rainbow tint. Skip steel wool and bleach.
